Description

Sugar Cookie Rice Krispies are a delightful twist on the classic treat, combining the buttery sweetness of sugar cookie mix with the iconic crunch of Rice Krispies cereal. This easy-to-make dessert features a marshmallow base infused with sugar cookie flavor, mini marshmallows for added texture, and festive sprinkles for a colorful finish. Perfect for holiday gatherings or any time you crave a nostalgic, crispy sweet snack.

Ingredients

Scale

Base Ingredients

  • ½ cup butter
  • ½ cup sugar cookie mix (dry mix from the pouch)
  • 1 bag marshmallows (10 ounces, about 40 large)

Cereal and Add-ins

  • 6 cups Rice Krispies Cereal
  • 1/3 cup mini marshmallows

Decorations

  • 2 tbsp sprinkles (Christmas or other color)
  • Additional sprinkles for topping

Instructions

  1. Prepare the Pan: Grease a 9″x13″ baking tray with cooking spray or line it with parchment paper to prevent sticking and ensure easy removal of the treats.
  2. Melt Butter: Place a large pot on low heat and melt the ½ cup butter slowly to avoid burning.
  3. Add Sugar Cookie Mix: Stir in the ½ cup sugar cookie dry mix continuously and cook for 1 minute, allowing the flavors to combine with the melted butter.
  4. Incorporate Marshmallows: Add the entire 10-ounce bag of marshmallows to the pot and stir continuously until they are fully melted and smoothly blended with the butter and sugar cookie mixture.
  5. Add Cereal: Remove the pot from heat and gently fold in the 6 cups of Rice Krispies Cereal with a spatula or wooden spoon. For easier stirring, spray the spatula with cooking spray to reduce sticking.
  6. Mix Mini Marshmallows and Sprinkles: Once the cereal is evenly coated, fold in the 1/3 cup mini marshmallows and 2 tablespoons of sprinkles. Some mini marshmallows will melt slightly, adding extra gooey texture.
  7. Transfer to Pan: Spread the mixture gently into the prepared pan in an even layer. Avoid pressing too hard to maintain a light, crispy texture; press just enough to hold the mixture together.
  8. Decorate: Sprinkle extra sprinkles evenly over the top for a festive, colorful appearance.
  9. Cool and Cut: Let the mixture cool for about 30 minutes to set properly. Then cut into 18 or 24 squares depending on desired size. Serve and enjoy your sweet, crispy treats!

Notes

  • Using cooking spray on the spatula helps prevent sticking when mixing the cereal and marshmallow mixture.
  • Do not press the treats too firmly into the pan to keep them light and crunchy.
  • Use parchment paper for easier clean-up and easier removal of the treats from the pan.
  • Sprinkles can be adjusted based on the occasion for customized decoration.
  • Ensure to melt marshmallows at low heat to prevent scorching and achieve a smooth mixture.
