Instructions

  1. Roast the Sweet Potatoes: Preheat your oven to 400°F (200°C). Slice the sweet potatoes lengthwise and scoop out some of the flesh to create boats. Brush the sweet potato halves with olive oil or butter, season with salt and pepper, and place them face down on a baking sheet. Roast for 20-25 minutes or until tender.
