Tiramisu Cream

  • 2 egg yolks
  • 60 grams granulated sugar
  • 200 grams mascarpone cheese, room temperature
  • 300 ml double cream or heavy cream
  • 1 1/2 teaspoons vanilla extract
  • 1 tablespoon coffee liqueur (optional)

Assembly

  • Cocoa powder, for dusting
  • Biscuits, for assembly (such as ladyfingers), soaked in coffee liqueur


Instructions

  1. Prepare Dry Ingredients: In a large bowl, sift together the all-purpose flour, cornstarch, cocoa powder, granulated sugar, and salt. Set this mixture aside for later use.
  2. Mix Wet Ingredients: In a separate bowl, whisk the eggs, cold whole milk, and vanilla extract until completely smooth and combined, ensuring no lumps remain.
  3. Combine Batter: Gradually pour the wet mixture into the dry ingredients while whisking continuously to prevent lumps. Stir in the melted salted butter until the batter is smooth and fluid.
