Description

A quick and healthy Tuna Melt recipe featuring a flavorful tuna salad with minced vegetables, melted reduced-fat cheddar cheese, and fresh tomato slices on whole wheat bread. Perfect for a satisfying lunch or light dinner, cooked stovetop to a crisp, toasty finish.

Ingredients

Scale

Tuna Salad

  • 4.5 ounce can tuna in water, drained
  • 1/4 cup carrots, minced
  • 1/4 cup celery, minced
  • 1 tablespoon red onion, minced
  • 1 tablespoon light mayonnaise (Hellman’s Light)
  • 1 teaspoon red wine vinegar
  • Salt and pepper, to taste

Sandwich

  • 2 slices whole wheat bread
  • 2 slices 2% reduced fat cheddar cheese or American cheese
  • 2 slices tomato
  • Olive oil spray

Instructions

  1. Prepare Tuna Salad: In a medium bowl, combine the drained tuna, minced celery, minced carrots, minced red onion, light mayonnaise, red wine vinegar, and season with salt and pepper. Mix thoroughly until all ingredients are well incorporated.
  2. Preheat Skillet: Heat a large skillet or griddle over low heat to ensure gentle toasting without burning the bread or cheese.
  3. Toast Bread: Lightly spray the heated skillet with olive oil spray to prevent sticking. Place two slices of whole wheat bread onto the skillet to begin toasting.
  4. Assemble and Melt: On each slice of bread in the skillet, layer one slice of reduced fat cheddar cheese, then evenly distribute the prepared tuna salad, and top with slices of fresh tomato. Cover the skillet to help the cheese melt evenly and cook until the cheese is melted and the bread turns golden and toasty, about 3-5 minutes.
  5. Serve: Remove the sandwiches from the skillet promptly and serve immediately while warm for the best melty and toasty flavors.

Notes

  • For added flavor, sprinkle a pinch of dried oregano or black pepper on top of the tuna salad before melting.
  • Use fresh whole wheat bread for a heartier texture and better nutritional profile.
  • Low heat cooking is key to prevent burning the bread while allowing the cheese to melt fully.
  • Olive oil spray helps crisp the bread with less fat compared to butter.
  • Can substitute light mayonnaise with Greek yogurt for a tangier and lower-fat alternative.
