Ingredients
Scale
Ice Cream Base
- 600 g coconut whipping cream (chilled overnight)
- 300 g avocados (weighed without pits or peel)
- 320 g vegan condensed milk
- 15 large fresh mint leaves (or 25 small leaves)
- 1 teaspoon peppermint extract
Add-ins
- 100 g dark chocolate (finely chopped)
Instructions
- Whip Cream: In a large bowl, whip the chilled coconut whipping cream until it becomes light and airy, creating a fluffy base for the ice cream.
- Blend: Add the avocado flesh, vegan condensed milk, fresh mint leaves, and peppermint extract to a high-speed blender. Blitz the mixture until completely smooth and creamy, ensuring no lumps remain.
- Fold: Using a rubber spatula, gently fold the avocado and mint mixture into the whipped coconut cream in 3 to 4 increments, combining them thoroughly without deflating the whipped cream.
- Add Chocolate: Carefully fold in the finely chopped dark chocolate pieces until they are evenly distributed throughout the ice cream mixture.
- Freeze: Transfer the combined ice cream mixture into a loaf pan and cover it tightly with plastic wrap. Freeze the mixture for at least 5 hours or until fully set and firm.
- Serving: About 15 minutes before serving, remove the ice cream from the freezer to allow it to thaw slightly for easier scooping. Use a hot ice cream scoop for the best serving experience.
Notes
- For best results, chill the coconut whipping cream overnight to ensure it whips up properly.
- If vegan condensed milk is unavailable, you can make your own by simmering coconut milk with a sweetener until thickened.
- Adjust the amount of peppermint extract depending on how strong you want the mint flavor to be.
- Use high-quality dark chocolate for the best flavor and texture contrast in the ice cream.
- Allowing the ice cream to thaw slightly before scooping improves texture and ease of serving.
