  • 1 cup fresh cilantro leaves
  • 1 cup fresh basil leaves
  • 1 avocado sliced

Harissa Peanut Sauce

  • 1/4 cup natural peanut butter
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon harissa paste
  • 1 tablespoon lime juice
  • 1 teaspoon maple syrup
  • 1-2 tablespoons warm water to thin
  • 1 clove garlic minced


Instructions

  1. Prepare Ingredients: Gather and prepare all the vegetables and herbs by shredding, slicing, and chopping as needed. Cook the rice noodles according to the package instructions, then drain and set aside.
  2. Make Harissa Peanut Sauce: In a small bowl, whisk together peanut butter, soy sauce, harissa paste, lime juice, maple syrup, minced garlic, and enough warm water to achieve a smooth, pourable consistency suitable for dipping.
  3. Soften Rice Paper Wrappers: Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it becomes pliable and soft. Lay it flat on a clean surface for assembly.
  4. Assemble the Rolls: On the bottom third of the softened rice paper, layer a small handful of noodles, carrots, cucumber, bell pepper, cabbage, avocado slices, and a few leaves of mint, cilantro, and basil. Fold in the sides of the wrapper and tightly roll it from the bottom up to seal the edges and enclose the filling.
